Lemon Streusel Cake Recipe

By reader request after discussing this recipe in the Forum, and in honor of sour cream being free at Jewel-Osco this week, here’s my Lemon Streusel Cake recipe, which is really my mom’s recipe. Thanks, Mom!
Cake:

1 18.25-ounce lemon cake mix – save 2 tablespoons dry mix in a bowl for topping
If you’re using a new, smaller 15.25-ounce cake mix, add 6 tablespoons of cake mix “upsizer” too
4 eggs
1 cup sour cream
1 box instant vanilla pudding
1/3 cup oil

Beat on medium for 2 minutes. Pour into two greased and floured loaf pans.

Topping:

2 tablespoons lemon cake mix
2 tablespoons brown sugar
1 teaspoon cinnamon
1 tablespoon softened butter
1/2 cup chopped pecans

Mix in a bowl. Sprinkle on top of both loaf pans. Gently press into top of loaf before baking.

Bake 45-50 minutes at 350 degrees.

    I made this today, and it is really good. Thanks for posting the recipe! While I was making this, I was thinking about the different flavors of both cake mix and pudding that I have because of all of the deals over the past month or so. Have you tried this using different combinations of cake mix and pudding?
