To me, the “package shrink” on the boxed cake mixes is the one that still aggravates me the most, but those box cake manufacturers actually did me a favor. After the boxed cake mix shrink happened, I tried using the extender recipe from Jill. Although the extender helped keep the size of the cake or cupcakes the same as before, the texture and flavor of the cakes were never the same. Obviously the cake mix makers had changed their recipe in addition to shrinking the size of the product.
I decided to find cake recipes made from scratch, which I had never made before. Pinterest is a great resource! After trying out several versions of various cake recipes, I have now found delicious recipes for chocolate cake, pound cake, and angel food cake. I also feel better about serving these cakes because they’re made with simple ingredients from my pantry — which I’m able to stock at low prices because of Jill’s blog!
