In preparation for the Build Your Kitchen Drawer Sweepstakes, Good Cook asked its team of Kitchen Experts to create a comfort-food style one-pot dish for dinner. I always enjoy these challenges, as I’ll brainstorm with everyone in my house to see what kinds of creation I should make. For this challenge, my husband suggested a one-pot skillet-style dinner featuring both chicken and all of the ingredients of a good loaded baked potato! So, I created the “Chicken Bake-Un-Potato” one-pot dish. (Say it out loud. You’ll get it.)
Chicken Bake-Un-Potato Serves 4-5 people Total preparation time: 25 minutes Ingredients: 5 slices bacon 3 large chicken breasts 4 medium to large potatoes, peeled and cubed (To save time, you could substitute diced and cubed frozen potatoes) 1/2 diced onion 1/2 diced bell pepper (red, green or both) 1/4 teaspoon black pepper 1 cup shredded cheddar jack cheese Sour cream (optional)
Preheat a large frying pan or skillet. Use a kitchen shears to cut the stacked strips of bacon into 1/2″ widths and drop them in the pan. Cook the bacon pieces in the pan until they begin to turn translucent. While the bacon is cooking, cut the chicken breasts into approximately 1″ chunks. Add the chicken breasts to the bacon in the pan and brown them together. Begin preparing the diced vegetables.
When the chicken is fully cooked, add all of the diced vegetables (potato, onion, peppers.) Continue stirring while the vegetables fully cook. Add 1/4 teaspoon black pepper and stir.
When the vegetables are fully cooked, turn the heat to low and sprinkle the cheese on top of the skillet. Once the cheese melts, remove from heat and serve. If you’re a sour cream fan, you may wish to top with that too!
This was fantastic! It’s got a delicious diner-style comfort-food vibe, and it has all of the flavors of a chicken and baked potato meal — together!
