Sweet And Tangy Lemon Chicken Inspired by a recipe for orange chicken from TheNoshery
Chicken:
2lbs. boneless skinless chicken breasts
3 cups Panko breadcrumbs
4 eggs
2 cups cornstarch
1/2 teaspoon salt
1/4 teaspoon pepper
vegetable oil
Sauce:
1 1/2 cups water
1/4 cup lemon juice
1/3 cup rice vinegar
2 1/2 tablespoons soy sauce
zest from one lemon
1 cup packed brown sugar
1/4 teaspoon ground ginger
1/2 teaspoon minced garlic
3 tablespoons cornstarch
1/4 cup water
Cut chicken breasts into cubes approximately 1″ in size. Beat the eggs into a bowl.
In another bowl, combine cornstarch, salt and pepper. Pour Panko breadcrumbs into a third bowl. Dip chunks of chicken into egg mixture. Roll them in cornstarch. Dip in egg mixture again, then roll in Panko. Set them aside (I used a large mixing bowl to hold all of the uncooked chicken pieces) until all chicken is coated.
Heat vegetable oil in a skillet (just enough for frying) and fry all of the chicken until golden brown. You’ll have to do this in stages. Once all of the chicken is cooked, begin making the sauce.
In a saucepan, combine 1 1/2 cups water, lemon juice, rice vinegar and soy sauce over medium heat. Stir until it begins to bubble. Add the lemon zest, brown sugar, ginger, and garlic. Bring to a boil.
In a cup, combine 3 tablespoons cornstarch and 1/4 cup water. Once cornstarch is fully dissolved, slowly pour the liquid into the boiling pot of sauce, stirring slowly. The sauce will thicken within a few seconds. Remove from heat, ladle sauce over cooked chicken pieces, and serve.

This is delicious served over rice too!

Out of all of these tools, my favorite is the Sweet Creations 5-piece prep bowl set. I’m a sucker for neat kitchen gadgets as it is (which if you know me at all from my posts, you’re already aware of!) but my favorite gadgets are 1) items you didn’t know you needed, and 2) items you reach for often now that they’re in your drawer!
