The Super Bowl is less than two weeks away, and Good Cook asked its team of Kitchen Expert bloggers to come up with new recipes for game day snacks! As I thought about all of the appetizers we usually make for game day, meatballs are always on the must-make list for us. So, here’s an updated twist on the meatball, reinvented as a finger food with bacon, cheese, and the flavors of honey mustard and chipotle. They’re quick to make too, so you can spend less time snack-making and more time watching the game. After one taste, my husband christened these “Bacon Bronco Bites!”
Jill Cataldo’s Bacon Bronco Bites Makes: About 24 meatballs You’ll need:
- One pound of meatballs, homemade or store-bought (I used Cooked Perfect Angus Beef meatballs)
- One cup of honey mustard chipotle sauce (I used Kraft Honey Mustard Chipotle “Anything” dressing — Wish Bone makes one too.)
- 24 slices of bacon (I used Safeway Thick Sliced Hickory Smoked bacon)
- Half an 8-ounce brick of sharp cheddar cheese (I used Cabot Seriously Sharp cheddar)
- Toothpicks
Bake or thaw meatballs ahead of time. Cook bacon in a skillet until it reaches the floppy state. Don’t let it get crispy, as we need to wrap it around the meatballs later. Preheat your oven to 350º. While the bacon is cooking, pour one cup of honey mustard chipotle sauce in a mixing bowl. Toss the meatballs in the sauce until the meatballs are generously coated. Grate the cheese into coarse shreds. Once the bacon has reached a floppy but cooked state, cool it on paper towels. Wrap each meatball in one strip of bacon, and use a toothpick to secure the bacon into place. Place the meatballs on a foil-lined cookie sheet or baking pan. Sprinkle the top of each bacon-wrapped meatball with grated cheese. Place meatballs on cookie sheet and bake at 350º for six minutes. Serve hot. Calories: Do you really want to know? I’m pretty sure you don’t. But oh, they’re delicious!

Gather your ingredients and utensils. I used my Good Cook Touch grater, Good Cook cast iron grill pan, Good Cook 2-quart Touch mixing bowl, and Good Cook Touch slotted spoon.
Fry the bacon. I like to use my grill pan for this so I can watch and make sure the bacon doesn’t overcook.
Pour one cup of honey mustard chipotle sauce in a mixing bowl. Toss the meatballs in the sauce until the meatballs are generously coated.
Grate the cheese into coarse shreds.
Wrap each meatball in one strip of bacon, and use a toothpick to secure the bacon into place. Place the meatballs on a foil-lined cookie sheet or baking pan.
Sprinkle the top of each bacon-wrapped meatball with grated cheese.
Place meatballs on cookie sheet and bake at 350º for six minutes. Serve hot.
