Perhaps you’ve seen commercials recently for Knorr Homestyle Stock. It’s a new chicken or beef stock reduction (like concentrated chicken or beef broth, but with vegetables and seasoning) that you mix with water and use in recipes. I first encountered Knorr Homestyle Stock at the BlogHer ’11 conference this summer, where Knorr had a booth set up allowing bloggers to cook with the stock. It’s got a good flavor that’s over and above traditional chicken or beef broth. It’s also been on sale quite a bit lately locally, so you may have tried it too. One of my readers pointed out that it has quite a bit of salt in it. According to the package, each 1-teaspoon tub of Knorr stock proportions out to 14 servings. Each of those servings has 730mg of sodium, which is almost a third of the recommended daily allowance.

Of course, salt in and of itself isn’t “bad” — it improves and intensifies the flavors of many foods. (It’s no coincidence that one of my favorite food blogs is called “Not Without Salt”!) So far, I have used the Knorr stock when slow-cooking meat. I had a 5lb. roast in the crock pot this week, and one tub of this, mixed with water, seasoned the meat easily. I added nothing else to the pot, and it was delicious (so good, in fact, that my husband was stealing little pieces out of the slow-cooker before I even got around to setting the table.) But if you’re on a low-sodium diet, you may wish to use less than one tub when cooking.

  90. Friends and family PLEAD (sorry for the brag) for my matza ball soup year round. My mother taught me how to make it and it’s never been a secret…just time-consuming: don’t toss those chicken bones – freeze (A LOT of) them! When it’s time to make soup: 1st boil, then simmer carrots, celery, garlic, broth and the bones for at least 12 hours, pour thru a sieve, put in the fridge overnight and remove the fat. The result is the richest stock imaginable! It will look like beef-broth-colored jello.

    Because it takes so long to make, I freeze some of the stock for other recipes.

    When I saw Jill’s recent post on a deal for Knorr Homestyle Stock, I decided (hesitantly) to give it a try. I used it for gravy and for a pot-pie casserole. Both were delicious!

    Knorr Homestyle Stock is such a time saver I will use it instead of my stock…except for my soup. Tradition is tradition after all!
