As one of Good Cook’s Kitchen Expert bloggers, I often get to participate in some fun promotions involving their great cookware and cooking tools, which I love to share with my readers too! On September 3rd, Good Cook kicks off their 2013 “Get Stuffed” Burger Challenge! Good Cook asked all of its Kitchen Experts to create a unique and memorable stuffed hamburger utilizing their new Good Cook Burger Stuffing Kit. (Read on for your chance to win one of these fantastic kits too!) Behold, my delicious creation: The Mega-Mango Coco Tiki Burger!
Mega-Mango Coco Tiki Burger We love tropical fruit and burgers, and I wanted to combine them for a tropical twist on the traditional hamburger. All of these flavors blend fantastically for a taste of the islands! Serves: 4
INGREDIENTS:
2 pounds ground beef
1 cup coconut flakes
1/2 onion
1 mango
1 pineapple (canned is fine too)
Brown sugar
Butter
Swiss cheese
Barbecue sauce (I used Garland Jack’s Sweet Brown Sugar sauce)
Liquid Smoke (optional)
4 Hawaiian-bread hamburger buns

DIRECTIONS:
1.) Tools Needed: Good Cook Stuffed Burger Press
2. ) Spread coconut flakes on a metal tray and toast at 350º for 8 minutes. Stir flakes halfway through the toasting process.
3. ) Chop and caramelize 1/2 onion and 1/2 mango over low heat in a frying pan with a little butter. As they brown, add a few pinches of brown sugar to the mix and stir. Remove from heat when both are evenly tinged with brown.
4.) Cut 1/2 cup pineapple into small chunks, or use 1/2 cup crushed pineapple, drained. Add pineapple to caramelized onion and mango and mix together.
5.) Grate 1/2 cup Swiss cheese and set aside for burger assembly.
6. )In a large bowl, combine ground beef with toasted coconut flakes. Mix well. Add 1/2 cup barbecue sauce to meat and mix well. If grilling indoors, add a few shakes of Liquid Smoke and mix as well.
7. ) Roll meat mixture into four even-sized balls. Working with one ball at a time, press in a Good Cook hamburger press. Sprinkle grated Swiss cheese in the center, and spoon in about two tablespoons of the onion/mango/pineapple mixture. Add another sprinkling of grated Swiss cheese on top. Fold the edges of the burger over the filling. Press and seal the hamburger completely around the filling.
8. ) Heat your grill pan or Good Cook Cast Iron Grill. Add burgers to grill pan and grill until cooked through, about 4-5 minutes on each side. Remove from heat. 9. ) Cut four pineapple slices and grill on each side until lightly caramelized. Remove pineapple slices from pan. Serve on a Hawaiian bun topped with a slice of Swiss cheese, grilled pineapple and a splash of barbecue sauce. Serve and enjoy!
