It’s hard to believe my children are already a month into their summer break! July is right around the corner, and instead of packing lunchboxes or perusing the school’s hot lunch menu, their lunch routine has transitioned into raiding the fridge and saying “What’s for lunch?”
Dutifully, I’ll rattle off a list of lunch options. We always have cold cuts, cheeses and bread or sub rolls on hand, and their dad and I often make mini subs or grilled sandwiches at lunchtime. However, the kids have reached a point where they’re burned out on the same-old, same-old. Last week, my youngest said, “No more sandwiches!“
What timing — two weeks ago, Carl Buddig and Company asked me to partner with them as a Buddig Deli Mom this summer and create some meals and snacks with deli meats that aren’t sandwiches! We headed to the supermarket to pick up some Buddig Premium Deli meats.
My sons picked out Buddig Black Forest Ham and Oven-Roasted Turkey Breast. What to make? The boys wanted “something hot” and “something I can eat with my hands.” Quesadillas fit the bill!
Along with our Buddig Premium Deli lunchmeats, I used flour tortillas and a package of shredded Cheddar Jack cheese.
Take six folded slices of Black Forest ham and slice both lengthwise and at an angle to cut it into smaller pieces.
Place a flour tortilla in the tortilla maker, and distribute the cut ham between the six “pockets” formed by the quesadilla maker’s pan.
Top with shredded cheese and a second tortilla. Cook for three minutes.
Doesn’t this look yummy? Remove the quesadilla from the maker and cut it into six pieces along the score lines. You can use a knife for this, but I like to use a pizza cutter — it’s even faster!
Once the quesadilla is cut apart, simply serve! We made both ham & cheese and turkey & cheese quesadillas, and the boys loved having a hot, “not-a-sandwich” lunch to enjoy in the sun today.
It only takes a little creativity to make more than a sandwich, and my children are already thinking about other “not-a-sandwich” ideas that we can make with Buddig deli meats. Wraps are a standard when the sandwich overload rebellion occurs. Also love tortillas for when “no more bread” gets announced. Which I have learned doesn’t always mean we are out of bread, just that no one wants it anymore. Good to get clarification so we don’t end up with 6 loaves no one is eating.

Roll ups with ham and the chive/onion flavored soft cream cheese are yummy, spread the cream cheese on the ham and roll up, slice into 1 inch rolls, serve with toothpicks for appetizers.

We have leftovers from the nite before alot. My hubby is a farmer & he needs more than just a sandwich for lunch so I always make extra for the next day. Every once in a while we do have sandwiches but not often. this looks so yummy though might be an option once in a while :)
